The creation of the Virág Cukrászda és Kávéház in Szeged, made without added sugar, won the Sugar-Free Cake of Hungary competition, which is announced every year by the Egy Csepp Figyelem Foundation together with the Hungarian Confectionery Industry Association. The victory of “Grandma’s Favorite” was announced at a press conference held in Budapest, in the Hunting Room of the Orzágház, where, in addition to the programs on August 20, the Cake of Hungary 2022 was announced, which became the “Naughty Plum Prince”. The winning cakes can be tasted from August 19, when they will be sold in many pastry shops in the country and in Budapest, on Magyar Ízek Utcája.

Any confectionary and catering unit in the country could enter the Sugar-Free Cake of Hungary competition, which was organized for the 11th time by the Egy Csepp Figyelem Alapítvány and the Hungarian Sugar Industry Association. The confectioners primarily used a list of ingredients approved by the National Association of Hungarian Dietitians to prepare their cakes.

This year’s winner was “Grandma’s Favorite”, prepared by László Gyuris, master pastry chef of Virág Cukrászda és Kávéház in Szeged. In this elegant cake with no added sugar, the fresh, pleasantly sour raspberry pith, the crispness of the white chocolate pistachio and the light mascarpone mousse complete the harmonious taste of some hibiscus flowers and rosehip marrow. The sponge cake is made from almond and coconut flour, so it does not contain any grain flour.

László Gyuris’ career choice was inspired by his beloved grandmother, in whose kitchen his first cakes were made. “Grandma’s favorite” was born in her honor. The confectioner from Szeged won the competition for the second time, after his “Little Chestnut” cake proved to be the best in 2019.

The energy content of “Grandma’s favorite” is 233.8 kcal per slice, while the carbohydrate value is 11.9 g, so it can be a good choice for diabetics, but we recommend it to everyone who is careful about the ingredients of what they eat. The laboratory tests of the cake were carried out by Wessling Hungary Kft., an independent food testing laboratory.

The winner received the main prize of 77 Elektronika Kft., the main sponsor of the Egy Csepp Figyelem Foundation, the developer of Dcont® blood glucose meters, a Zsolnay porcelain vase in the Parliament. As a special prize, he received a handmade cake plate offered by Zsolnay Porcelán Manufaktúra.

The second place was awarded to the “Chocolate King” created by Ádám Sztaracsek and Péter Szirmai, confectioners of the Jánoska Cukrászda in Komárom, and the third prize went to Sabján Sabján, the pastry chef of Caketo go Budapest, creator of the “Strawberry curd dumpling” cake.

The aim of the program launched in 2012 by the Egy Csepp Figyelem Foundation and the Hungarian Confectionery Industry Association is to draw the attention of confectioners to the growing demand for cakes that do not contain added sugar, which can be integrated into a balanced diet. The program is implemented with the support of the Government of Hungary.

This year, the creation of confectioner Orsolya Karikó from Nagykőrös, the cake with the imaginative name “Naughty Plum Prince”, can bear the title of Cake of Hungary. When the idea of the cake was born, the confectioner of Vanília & Gelarto from Nagykőrös was inspired by the harmonious pairing of the excellent Eger red wine and the taste of our favorite Hungarian fruit, the plum. The base of the cake is a flourless, hazelnut dacquoise with whipped caramelized chocolate cinnamon crunch, which is softly layered with a fresh, light and tasty, piquantly seasoned plum chocolate mousse, made crazy by the atmosphere of the classic red wine created by the excellent family winery of the Eger wine region, as well as the wild cranberry, which is also a red wine. plum jelly, thus pampering our senses. The crown of the cake is a fruity topping that evokes the taste of freshly picked plums.
