Fluctuating workforce
Every year the Guild of Hungarian Restaurateurs (MVI) publishes its statistical report on the hospitality industry. This publication is based on statistical data published by the Central Statistical Office (KSH). The second part of our brief summary deals with sales performance and HR issues.

According to Károly Zerényi, presidential advisor of MVI, about one third of sales concentrated to the summer period (June-August).
Food sales and number of employees
Food sales accounted for around three quarters of the sales revenue of restaurants before the coronavirus pandemic. With the lifting of the pandemic-related restrictions, the weight of food sales has decreased from 90% in Q1 2021 to 79% in 2023. In 2023 the accommodation and food service sector employed 179.5 thousand people (about three quarters of them in hotels and restaurants), which was 3.8% of the national economy as a whole. After the post-pandemic reopening, the number of people employed had gradually increased, but in Q3 and Q4 2023 it decreased again due to economic difficulties and business closures.
The evolution of wages
In the hospitality sector the average gross wage of full-time employees was HUF 339,000/month in 2023: physical workers earned HUF 311,000 and those doing mental labour took home HUF 454,000. Wages were 17% higher than a year earlier and represented 59% of the national economy average. Gross monthly earnings including service charges in accommodation and food services were HUF 396,000 in 2023, 18% higher than a year earlier. //
