Differences between plant- and animal-based proteins
A recent study published by AgResearch analyses the nutritional and functional differences between animal- and plant-based proteins. The study claims that usually plant-based foods represent a less complex source of protein than animal-based ones, for instance because they are less digestible. However, certain procedures can make plant-based proteins more similar to animal-based ones in their functionality.
