Climate change and health-conscious trends are driving manufacturers towards new ingredients. The global rice beer market is expected to exceed USD 5.5bn by 2031, while Meli beer – developed by MIT-Harvard and made entirely from quinoa – has entered the market as a gluten-free alternative. Fonio grain comes from Africa, where its water-efficient cultivation helps local communities. Carlsberg plans to brew all of its beer from regenerative grains by 2040.
