According to Tesco, this surge in demand is driven by flexitarians seeking bigger control over their food consumption. The company sees plant-based foods as the biggest culinary trend of the century so far and – although initial interest has waned as the sense of novelty has worn off – there is now a renewed interest in plant-based meats. Sales of plant-based steaks and chicken breast, along with classic meat substitutes tofu and tempeh, have augmented by 20%, while meat-free burger sales were up 10%. //
