Star chefs in Budapest
The Hungarian Bocuse d’Or Academy and Hungexpo invited 4 famous French chefs for 5-6 October, owners of prestigious restaurants in Lyon. They met members of the Academy and went to Café Erté, Bock Bisztró and Gundel. They spoke with great respect about the cuisine of Bock Bisztró, the kitchen of Lajos Bíró. They walked around the Central Market Hall on Fővám Sqaure, tasting mangalica salami, hot sausage, lángos and gulyás soup, while answering our questions. Christophe Marguin, the president of Toques Blanches Lyonnaise said their task was to convey the spirit of the competition to Hungarian Bocuse d’Or participants. Joseph Viola, the holder of three Michelin stars thinks that young Hungarians chefs should go abroad to learn.
