The salted, air-dried, thinly sliced dark red meat is an excellent accompaniment to full-bodied red wines as a wine pairing or as a great starter for any festive dinner. The bresaola can be served with cheese platters, caprese salad, cocktail tomatoes and cheese, or as a bite to eat, or as a carpaccio.
