Magazine: Study trip done the MVI way – Part 3
Between 8 and 10 October 2015 the Guild of Hungarian Restaurateurs (MVI) and Coninvest Kft. organised their 3rd study trip, this time to Austria. The second day started in Obertrum, more precisely in the Trümer brewery, which has been in the Sigl family’s ownership for 240 years. They make 100,000 hectolitres of beer a year, covering 1 percent of the Austrian beer market.
Still in Obertrum, the next stop was spice and taste factory Raps. At the German company’s Austrian branch we learned that they have 33,000 spice mix recipes, which are updated year after year as the taste of spices varies according to the year of harvest. The majority of recipes contain the secrets of meat processing plants, butchers, small farmers and restaurants. 32kg is the smallest quantity Raps manufactures and every day 26 tons of spice leaves the factory.
From the factory participants made their way to Michelin-starred,18-Gault Millau-point restaurant Ikarus in Salzburg’s Hangar-7. They enjoyed a 3-course fine dining dinner, washed down with a few glasses of excellent wine. The restaurant is also special because it is situated in the futuristic exhibition room of Red Bull’s owner, who collects old aeroplanes and cars.
