Magazine: MVI’s recommendations: how to reform vocational education
The Guild of Hungarian Restaurateurs (MVI) sent their remarks and recommendations about vocational education to the Education and Training Directorate of the Hungarian Chamber of Commerce and Industry (MKIK). MVI expressed that they welcome the start of the reform process in vocational education, the goal of which is to bring the knowledge of students in line with the needs of the labour market. However, the guild sees no real change in the educational materials proposed by the directorate. Below you can read some of the recommendations MVI made to improve the level of vocational education:
1. Cooks: at the exams student should compile the menu to be cooked, relying on the basket of ingredients they get. Cooks need to be able to organise work in their head – in real life there is no time to prepare written work plans. Students need to know ingredients by experience (taste, possible ways of preparation, etc.) and not from books. Health and safety at work are of utmost importance, together with food safety measures.
2. Waiters: There is no need to train waiters for three years and education should definitely be more practice-oriented. Future waiters will have to know more about how food is prepared. Training baristas and waiters serving food and drinks at various events should be given more attention in vocational education. In addition to these, MVI also recommended harmonisation in training catering organisers and unit managers. /
