The veil has fallen on this year’s Saint Stephen’s Day bread
This year’s St. Stephen’s bread, Grandfather’s bread with potatoes, was made using traditional sourdough technology, with the addition of potatoes, from four types of flour. The Hungarian Bakers’ Association XIII. The winners of the Innovative Bread and Salty Walking Cake categories of the Saint Stephen’s Day Bread Competition were also presented.
This year’s Saint Stephen’s Day bread was developed by the Hungarian family-owned Balmaz Sütöde Kft., founded in 1991. The winning product was made with four types of flour, as well as salt, water, lard and boiled potatoes with a 12-hour traditional leavening process. Thanks to the gentle technology and the appropriate baking environment, it can be consumed for up to 14 days. The product called Nagyapám bread with potatoes has a thick and crisp crust, and has a tasty and harmonious taste.
This year, Balmaz Sütöde Kft. won first place in the St. Stephen’s Day bread category for the third time: in 2020, Hajdúság homemade bread, in 2022, Gulyás bread, and this year, their product called Nagyapám kenyere with potatoes became the bread of the country.
According to the professional jury, the best of the Innovative bread category was the wild sourdough bread with Jalapenos-cheddar cheese, also made by Balmaz Sütöde Kft. The product’s uniqueness and specialty lies in the fact that it is made with an extremely long 24-hour fermentation process, without added yeast. When the final product is ready to bake, the crust will be crispy and the filling will be tasty, slightly spicy from the paprika and creamy from the cheddar cheese. In 2023, Balmaz Sütöde Kft. was already first in the Innovative bread category: then the Aranymetszés bread proved to be the best.
