Dairy alternatives are conquering
According to a survey by market research firm Innova Market, a third of consumers believe alternatives are healthier and 27 percent increase the variety of their diet through their consumption. While consumers are increasingly open to alternatives, they also have significant expectations of them, according to the National Chamber of Agriculture (NAK). One such expectation is to provide a sensory experience similar to a traditional product. However, it is an important fact that plant and animal proteins show fundamental differences. Milk proteins, for example, form strong nets in an acidic medium to form a creamy texture, while vegetable proteins are unable to do so. (agrarszektor.hu)
