Culinary compromise
In August the Kölcsey Centre in Debrecen was the host of a conference on the culinary world of the Austro-Hungarian Monarchy. The idea for the conference came from Imre Martin, the owner of Ferdinánd Monarchia restaurant and beer house, and Csaba Katona, historian in the MTA BTK Institute of History. At the conference historians spoke about the foods and drinks of the Monarchy, the peculiarities of the Czech and Austrian cuisines, the culinary heritage of the period and its influence on today’s dishes in different regions. //
