A special creation became Hungary’s Cake (video)
We can celebrate Hungary’s birthday this year with a special cake combining modern and traditional Hungarian ingredients. The Mákvirág confection, which won the title of Cake of Hungary and is a creation of Édes Vonal Cukrászda in Vác, can be purchased from August 19 at the St. Stephen’s Day event series and in designated confectionary shops. Pastry chef Alfréd Kovács was asked by Zséda, the Szent István Nap ambassador, about the basic idea and characteristics of the award-winning creation.
It is now a tradition that those interested can taste Hungary’s Cake for the first time on Saint Stephen’s Day. The Hungarian Confectionery Industry Association has announced this prestigious competition for the eighteenth time in honor of our national holiday on August 20. The main goal of the competition organizers this time was to combine modern, healthy ingredients with ingredients known from the rich Hungarian confectionary tradition in the creations entered for the competition. In addition, the tender conditions included the requirement that at least 40 percent of the competition cakes contain whipped cream or other layers of dough.
This year’s prize-winning creation, the Mákvirág cake, dreamed up by Vác pastry chef Alfréd Kovács, has all these characteristics, as it combines traditional Hungarian ingredients such as poppies, blackcurrants and almonds.
According to the confectioner, in the Mákvirág cake, the memory of the poppy dough is combined with the memory of his grandmother offering fresh cakes and black currants plucked in the garden. Its creation is a fairytale cake to the core, in which the defining flavors of your childhood are captured: in addition to the soft texture of the white chocolate cream, there is also the taste of tart black currants, the almond flour and poppy seeds sponges and the crunchy experience of the black sesame seed grillage.
