Healthy meat products rich in fiber and protein have been developed in Debrecen
A new product line consisting of health-promoting, fiber- and protein-rich meat products containing unique bioactive active ingredients has been developed by János Gulyás and Partners Ltd. from Felgyő in a consortium partnership with the University of Debrecen (DE) – it was announced at the project closing conference on Friday at the university’s agricultural center.
526.7 million forints were awarded for the development of the meat products in the Economic Development and Innovation Operative Program (GINOP)’s framework program for the promotion of corporate research, development and innovation activities. The total budget for research and product development was 765.7 million forints – it was announced at the project closing.
László Stündl, Dean of the Faculty of Agriculture, Food Science and Environmental Management at DE, highlighted:
The development of meat products enriched with unique bioactive active ingredients (essential trace elements, antioxidants and prebiotics) was implemented, which both support the health of consumers and increase the innovation potential of the domestic meat industry.
In addition to product developments, the aim of the innovation activities was to develop new processes and reliable and sensitive testing methods that are suitable for standardizing the unique composition of innovative meat products and for constant monitoring of quality and processing processes through real-time and non-destructive testing – he said, adding: the project contributes to the modernization of the industry, improving product safety and quality by facilitating the introduction of cost-effective, sustainable production processes.
According to the dean, the developed products represent a new category, as they are functional meat products that serve not only to support traditional nutrition, but also to preserve health and provide certain targeted physiological effects.
