Planteneers Presents Clean-Label System for Plant-Based Ice Creams at ISM Ingredients
Planteneers, a producer of custom system solutions for plant-based alternatives, has announced it will be presenting a functional system for the production of frozen desserts at ISM Ingredients in Cologne.
Called fiildDairy IC 171001, the system is said to combine “creamy enjoyment, clean-label, and nutritional added value”. It enables the creation of dairy-free ice creams that reportedly deliver an authentic dairy-like texture with no need for additives or flavorings.
Made from plant fiber and chickpea protein, the premix can be used to produce a variety of plant-based desserts, including ice creams, frozen yogurt, and frappé products. The system is plant-based, vegan, halal, and kosher-certified, with a twelve-month shelf life. It is claimed to have simple “plug-and-play” usability on all standard production lines, enabling fast integration into existing processes.
“Plant-based alone is often no longer enough”
The new system can also be used to produce reduced-sugar or reduced-calorie ice creams containing plant fiber for added nutritional value, reportedly without sacrificing creaminess, overrun, or melt properties. The solution offers significant flexibility for many different market segments and target groups.
To use the premix, manufacturers only need to combine it with water, sugar, and fat, before moving on to the next stage of their conventional production process. If desired, products can be made oil-free, for example by using nut
pastes.
“Plant-based alone is often no longer enough; products must meet additional criteria,” Dr. Matthias Moser, Managing Director of the Food Ingredients Division of the Stern-Wywiol Group, told vegconomist in a recent interview. “They need to have a certain protein content, they have to contain fiber, etc. These higher quality demands are reflected in ingredients lists as well as in the taste – and that’s the decisive factor. Products have to taste good, otherwise they simply don’t have a future.”
