Cell-based cocoa to save the chocolate industry?
Finnish food industry giant Fazer has begun researching cell-based chocolate, in order to be able to cultivate confectionery ingredients without the need for traditional farming inputs in the future. Cellular agriculture means biological production instead of farming. Heli Anttila, Fazer’s vice president of product development: “This is a long-term project, aiming at the future. Managing traditional cocoa sustainably is Fazer’s first and foremost priority, but we want to explore and innovate for the future too.”
