The result was surprising: the Future of Bread lies in its Past. Many people feel nostalgic about the taste of bread when they were little. Puratos wants to bring this taste back with the help of sourdough starter, a key bread ingredient used for thousands of years. The company has even built a Sourdough Library in St.Vith in Belgium, to preserve more than 100 different types of sourdough starters from all over the world.
We at Puratos believe that the bakers of today and tomorrow should have access to the expertise of the past generations of bakers. This is why we revive the tradition of sourdough bread with our very own O-tentic and Sapore active bakery components, which are based on devitalised sourdough fermentation.
