15 liver creams were tested by the editors of Index
Fifteen flavored liver creams were tested by the Index editors, but experts also have their say in their extensive liver cream overview.
“When shopping, almost every Hungarian has some kind of meat product in their shopping cart. For example, liver cream, the flavored versions of which appeared on store shelves in large numbers about ten years ago”
Krisztina Bódi, who previously worked as the marketing director of a meat company, told the newspaper.
The food marketing expert, vice president of the Agricultural and Food Marketing Department of the Hungarian Marketing Association, added:
“Liver cream is an honest product that contains liver, fat and salt, and you don’t have to be afraid of E-numbers, which help with shelf life if used in moderation.”
The Index indicates that Gyulai, Gallicoop, Kaiser and Hamé voluntarily made their products available, but “they cannot be smeared with a little liver cream”, they emphasized. The rest of the products, including private label products, were taken off the store shelves by the journalists.
It is worth noting that in the “book” of the National Food Chain Safety Office, liver cream is listed as a heat-treated product with a low microbiological risk. According to Nébih, the preparations belonging to this product range can be classified into three groups, depending on the liver content:
Meat product with liver content (1-24 percent liver content),
Liver, liver cream, liver spread (25-34 percent liver content),
Liver pate (35 percent or more liver content).
“Hungarians are big consumers of pork, which is why it dominates the market for processed meat products, poultry is well represented, and those who want something really special choose duck or goose liver. There is now a separate category for vegetable creams based on liver, which are not only sought by vegetarians. You can also make liver at home, a layer of fat will appear on top of it, and the texture will be lumpier due to the lack of emulsifier”
