PTE and Danubiana Kft. start developing grape-based gin products
Danubiana Kft., which is based in Bonyhád and deals with wine production and export, is starting to develop new gin products made from grapes without loss of aroma, together with the University of Pécs (PTE), the higher education institution in Baranya told MTI.
The consortium formed by the institution and the business association won HUF 430 million for the project from the additional funds of the Economic Development and Innovation Operational Program (Ginop).
The experts will be the first in Hungary to develop three grape-based gin products with a unique character by applying innovative technologies for grape processing, which will reach the quality for marketing at the end of the project, the announcement said.
According to the information, the development would promote the use of the existing high-value Hungarian grape stock, and respond to the decreasing level of wine consumption in Hungary, as the project could lead to an alternative way of using grapes.
During the development, the methodology of the combined effect of two technologies is being investigated, the essence of which is that they enable the destruction of the berry skin and the immediate and complete extraction of the aroma compounds from the grapes, not by enzymatic or chemical, but by physical methods, they wrote.
