Five seasonal fruits worth tasting with bacon
Opposites attract each other – says the old truth, and it is the same in gastronomy. An entire Asian culinary art is based on the pairing of sweet and sour, but sweet and salty flavors are not unknown either, just think of the resounding success of salted caramel, or the kitchen tip that a pinch of salt brings out the sweetest taste best. So it’s worth sprinkling seasonal fruits with a bit of bacon, or maybe grilling them wrapped in bacon, because you get elegant, light and spectacular summer dishes.
And the secret lies in the fact that the sugar content of the grilled fruits caramelizes, so their taste becomes even more intense, which the salty bacon dressing turns into a real flavor bomb. The point is that the fruit does not soak the bacon, and that a crispy, salty exterior covers the soft and juicy interior. And if you want to increase the pleasure, add cheese to the fruit-bacon pairing.
The pear
Marble cheese goes very well with pears. Before wrapping it in bacon, you can also put some blue cheese or spicy cream cheese in place of the hollowed-out core. A quick delicacy for guests, if you fill a baking tray with pilaf sheets folded like a fan, and alternately stuff spicy pears and marble or Camembert cheese between the layers. Pour over the whole thing with cream beaten with eggs, sprinkle with pieces of bacon, then it can go in the oven for a quarter of an hour. It is perhaps even tastier lukewarm than hot.
The apple
The apple, some mature cheese with a characteristic taste and bacon are an unbeatable trio. It’s delicious grilled together, but it can also be fried separately in a salad or sandwich. The number of variations is almost endless, depending on the type of apple and cheese you choose. As for the bacon, it brings out the taste of the apple even more if you try it with the new version of the summer, the applewood-smoked version, so that the fruity taste comes back a bit.
The peach
Peaches don’t really go well with cheeses, but rather with meats. It makes even the most uncharacteristic chicken really exciting and tasty, especially with spices. It’s also very easy to prepare, put the sliced peaches on top of the seasoned chicken and wrap it around with bacon. It will make a really showy and light summer lunch or dinner, which can be sliced nicely even when cooled.
The plum
If you want something escapeable, which can also be flashy, then we can’t find a better solution than prunes wrapped in bacon. It goes very well with a little fresh mozzarella next to the plum before wrapping it in bacon and frying it until crispy. And the real connoisseurs should soak the dried fruit beforehand in a little spicy red wine or rum. Any salad with mayonnaise goes well with it, and even the most determined meat lovers will not complain.
The fig
The classic pair of this beautiful fruit is soft goat cheese.Cut the figs crosswise and place a piece of goat cheese in the resulting opening, a dot of honey can also be added, then wrap it in bacon and bake until crispy. Serve on fresh salad leaves, which don’t need anything else, just a little olive oil, salt, pepper, some lemon juice and the majestic figs with bacon.
“For fruit-bacon combinations, it is important to wrap healthy fruit in high-quality bacon. These pairings will be really delicious if bacon made from quality meat does not contain flavor enhancers, dyes or sugar, because good bacon does not need these, and they only suppress the natural taste of the fruit.”
– emphasizes Péter Kovács, Gierlinger’s bacon expert.
