New wine instead of old wine
The tradition of new wine is the integral part of Hungarian wine culture. The new wine means the wine that was born on St. Martin’s day. The fresh wine can be only satrted to be marketed on 6th of November only one minute after midnight.
The wine makers call the young wines also new wines, which had not yet dominated by the maturing tastes and smells, because the "perfect" new wine is bottled after fermentation, without maturing. The special aroma and taste of the new wines are short-lived, so there's no sense of long storage, because it will not be better with time.
