What makes an ice cream successful?

Gergő Fehér won Ice Cream of the Year with his creation Bíborka. The self-taught confectioner works with one colleague in Cafe One in Békéscsaba. He learned ice cream making at various courses in Budapest. His team has only been making ice cream for 4 years and this was the first competition they have ever entered. As many ingredients were sourced locally as possible, e.g. sauces made from chilli grown in Újkígyós. The confectioner is happy to see that artisan ice cream making is spreading in Hungary. //
