This time, it’s Buday!
Peter Buday, the number one media star among Hungarian chefs has finally parted with his role as sous-chef beside Judit Stahl and now has his own gastronomic program on the national TV station. His co-operation with Judit Stahl ended in perfect harmony, as she accepted that this is not an offer to be turned down. “I owe her a lot, since she was the one who put me on the screen” – says Péter Buday. The TV program running under the title “This time, it’s Buday!” allows him to adapt traditional Hungarian gastronomy to modern taste. As he practices sumo, it is no surprise to see him facing the fact that his experiment with restaurant Trio failed in a disciplined way. “We have made an error in our assessment of the market, as it is much harder to revive a dying restaurant, than to open a completely new one”- he comments. In addition to Matteo, he has recently taken over the former buffet of the museum of Fine Arts. Taking inspiration from the cafes seen in the British Museum and the Louvre, he turned the place into a cafe-restaurant where people can even have lunch. He also helps the Cora retail chain in finding materials and products regarded as traditional in Hungarian cuisine, which are not yet sufficiently represented in the assortment. For example, they have already found a dried ham equal in quality to that of Parma and a true speciality: goat mozarella. He also provides recipes which appear with these products on the shelves, so that housewives can learn modern cooking techniques – at least for domestic use. Apart from all these activities, he also teaches gastronomy in Károly Róbert college in Gyöngyös.
