What is a good Easter ham like?
When you cut good quality smoked Easter ham, it is claret-coloured inside and it tastes pleasantly salty and smoky. When touching a good ham, it must be neither soft nor tough. The Codex Alimentarius defines the sodium chloride content of smoked meat: it must not exceed 7 percent; with smoked-cooked meat the limit is 4.5 percent.
