Microgreens or sprouts?
With the rise of healthy eating, more and more foods that were previously considered novelties are entering Hungarian kitchens. These include sprouts and microgreens, which seem similar, but there is a significant difference between them in terms of their production and sale. While microgreens can be grown and sold as primary producers and small producers, the production of sprouts is an activity that requires a permit.

The difference is that microgreens are considered vegetables, while sprouts are particularly risky products from a food safety perspective. During germination, the moist, warm environment favors the growth of bacteria, such as E. coli. Therefore, the production of sprouts has been a licensed activity since 2013 and can only be carried out in an officially licensed facility. Microgreens, on the other hand, can be grown and sold as primary producers and small producers. Microgreens produced as primary producers can only be sold to final consumers (e.g. at the market) or to retail or catering establishments as a registered small producer. Therefore, if the goal is to produce your own greens that can be safely sold, microgreens are the right choice, as the production of sprouts is only possible under approved food industry conditions.
