Which way, USA?
The National Restaurant Association conducts a survey each year in the USA to identify new trends are in the business. At the end of 2007, they interviewed 1,100 chefs about the direction they believed the business was developing in. The chefs agreed that seasons have the biggest influence on menus, as dishes made from the freshest ingredients are the most popular ones. Another prevailing trend is the continuing growth in popularity of ethnic cuisine. This is partly due to demographic trends and partly to changes in lifestyle. Latin and Asian cuisine has become fashionable.
