Based on the results of Hungarian researchers, mushroom growing can be made safe
In addition to large-scale technologies that include digitization, the mushroom industry also relies heavily on the use of plant framework materials and various agricultural wastes. However, a number of molds settle on their surface, which also contain toxic compounds, i.e. mycotoxins, among the products of secondary metabolism. One of the main goals of the project, which was funded by the National Competitiveness and Excellence Program, was to assess their food safety risk as accurately as possible. (MTI)
