A growing proportion of Hungarian restaurant growers demand high quality food and service, and they also have the money to pay for them. Television programmes and the internet are pouring the gastronomy of other countries on us, so let’s take a look at what kind of trends we can expect in 2015: 1. technology will bring the most important changes – ordering by tablet computer, paying by smartphone; 2. a growing number of restaurants will try to improve guests’ dinner experience by using audiovisual tools – this is called neurogastronomy; 3. not only healthy food but also those for food allergic people will appear on menus; 4. small portions will return – tasting menus, tapas-like dishes, etc.; 5. food will be available everywhere, in hypermarkets, at the marketplace, etc.; 6. the difference between different restaurant types will disappear – fine dining chefs open ‘simple’ places, while fast food chains increase the level of service; 7. fast food chains will offer a bigger variety of food, adapting to trends more successfully than before; 8. Asia will dominate – experts say that in 2015 Korean and Vietnamese cuisine will conquer; 9. in the world of flavours sweet will become a bit less important and chefs will experiment more with sour and umami; 10. a few new stars: cauliflower, cabbage salad, bacon, oyster, siracha, flavoured butter, yogurt with vegetables, artisan toast.
