Magazine: Chef’s avant-garde
The building of Casino de Madrid was built in the 19th century and houses a place called The Workshop of Paco Roncero, each element of which was designed to reflect the avant-garde ideas of the Michelin star winner Spanish chef. Only nine guests can sit down at a time to the table with special heating to keep the food warm, an ideal humidity level, 216 types of olive oils decorating the walls, and spectacular sound and light effects all contribute to the perfect dining experience. The room is considered an ‘experimental area’, it is Mr Roncero’s own playground that only invited guest are allowed to enter, who have to accept the fact that they are not simple guests but the participants of a project.
