Magazine: The new generation likes to roast on open fire
According to Péter Pataky, the chef of Debrecen restaurant Ikon, basically all men between the ages of 35 and 45 like to roast on open fire. Today all kinds of modern grilling equipment are available in Hungary, so anyone can experiment with new techniques. In Ikon’s kitchen they use smokers, roasting meat for 10-12 hours at 110°C. For instance one of the dishes Mr Pataky makes is pulled pork, but grilling fruits and vegetables is also trendy.
