The best breads in Hungary were selected
The XIII. organized by the Hungarian Bakers’ Association ended today with the second round of judging. Saint Stephen’s Day Bread Competition, for which nearly 100 products were entered by Hungarian-owned baking enterprises. In addition to encrypting the products, the two jury committees evaluated them using a scoring method. After summing up the scores, the winner of the Saint Stephen’s day bread, as well as the best product of the Innovative bread and Salty walking cake categories will be selected.
This year, the professional organization announced its competition in 3 categories. 20 bakeries launched their 33 products for the title of Saint Stephen’s Day Bread, 19 companies entered the Innovative bread category with 38 products, while 12 businesses entered 27 products for the Salty Walking Cake. The entrants developed their baked goods for this competition, so they have not yet appeared on the market. In the first round of the prize-winning competition, based on the professional jury’s scoring, the 9 highest-scoring products from each category entered the second round of judging.
You could apply for the Szent István daily bread category with a product that was made with traditional, added yeast, sourdough technology, and at least two types of flour. It was a requirement that it contain only Hungarian and natural ingredients. During the evaluation, the jury members scored the shape, shell, lining, aroma, taste, aesthetics and shelf life. The breads are also subjected to laboratory tests to determine whether their salt and acidity levels meet the requirements of the Hungarian Food Code.
