Small-scale farmers, restaurant owners and consumers
At a recent conference Minister of Agriculture István Nagy told: those restaurants that wish to make further progress as part of Hungary’s culinary revolution, can only do so by using top-quality Hungarian cooking ingredients. There are already 288 farmers’ markets all over Hungary. Influential association Stylish Restaurants in the Country (SVÉT) operates a website, svétasztal.hu, which brings together farmers with restaurant owners.
The association’s president László Ruprecht opines that Hungarian ingredients are excellent, but they simply can’t reach restaurants due to logistics reasons. SVÉT has teamed up with the Bocuse d’Or Academy and the Pannon Gastronomy
Academy to help farmers make a living in the long run from selling their products to restaurants.
