Whose future is it?
The stories of the two former chairmen of Étrend association illustrate the present situation of Hungarian gastronomy well. Péter Mózes, who resigned in February had pointed out the problems which could lead to a crisis earlier. These have already begun to undermine the operation of Étrend. However, a group formerly opposed to the chairman, has also began to lure him back to his position, as they have realised that he is the only person acceptable to the sponsors. Mr. Mózes has told us that he has no intention of returning, as he believes that the time for reforms has not come yet. There are only few places where chefs have adequate motivation. Competitions only serve a small elite. A reform in education would also be needed, but this would yield results only very slowly. Quick change would only be brought about by a large number of young chefs working in foreign countries, but there is no guarantee that they would have any reason to return.
