Katsuramuki, cutting vegetables are thin as paper
Sushi chef Hasan Karabazar practices katsuramuki, the Japanese art of cutting vegetables into paper-thin sheets. The skill is extremely difficult to master, but can bring a refreshing twist to sushi when done right. It’s also a beautiful way to add a bit of garnish to food.
