Almost one in four people try to eat less meat – this is the result of a 2019 poll published by Euromonitor. Meat exemption is thus a big deal: in 2018, the meat substitute business was worth almost 20 billion USD.
Plant-based protein products, including quasi-meat substitutes, have undergone major changes in recent decades: organoleptic properties such as that of meat.
