The Hungarian population consumes approximately 3 kilograms of duck meat and between 70 dkg and 1 kg of goose meat annually. The turnover of waterfowl products increases dramatically with the arrival of the autumn period, from the second half of October. The peak period is concentrated on the few days before St. Martin’s Day and Christmas. In recent years, customers have increasingly sought out cut and ready-to-eat products, while demand for whole ducks and geese has gradually decreased, according to the experience of Auchan experts.

Given the seasonality of consumption, Auchan stores offer an expanded product range of fresh duck and goose products from the weeks before St. Martin’s Day until Christmas. They stock 40 types of duck products at this time, and the number of goose products is close to 20. The commercial experience of recent years shows that instead of whole ducks or geese, more and more people prefer prepared, cut meats or so-called ready-to-cook products. The wide range also includes a large number of innovative sous-vide, completely ready-to-cook products, which, while preserving all the taste and aroma, only require “finishing” kitchen operations to make baking and cooking faster and more convenient. Auchan’s iconic St. Martin’s Day products include goose legs, goose breasts, goose necks, goose wings, goose liver and goose fillets. The chain is preparing not only with a wide selection, but also with continuous promotions, so that every customer can find the perfect ingredient for the festive goose dish.

During this period, in addition to fresh meat, duck and goose products are also offered in increased quantities among meat products. The 16 types of products include spreads, lard, pâté and liver. One of the specialties of the offer is Auchan’s premium duck fat, which is healthier than we think. Duck fat — like goose fat — belongs to the category of animal fats with a more favorable fatty acid composition. Its structure is similar to that of olive oil, which is why it is often called “animal olive oil” .

The controlled system of domestic duck and goose farmers ensures high quality and transparent, sustainable processes.
