On the first weekend of October 2025, rabbits will be the main character in Hungarian restaurants. The open goal of the new initiative is to promote the consumption of rabbit meat, this gourmet, extremely healthy and versatile dish. On Saturday and Sunday, guests can choose from gastronomic specialties such as rabbit broth, wild rabbit leg with rosemary or rabbit spine wrapped in black forest ham.

This weekend, those who visit the restaurants participating in the European Rabbit Meat Days event can enjoy an unforgettable culinary experience. The public can taste delicious dishes, uniquely conceived rabbit recipes, soups, stews, roasts throughout the country, while rediscovering the harmony and versatility of a long-forgotten taste.

On October 4-5, 2025, visit one of the restaurants participating in the program and taste the varieties of rabbit meat delicacies!

Rabbit on your plates – even on weekdays!

Rabbit meat is one of the healthiest types of meat, yet it is undeservedly neglected from Hungarian tables. It is allergen- and fat-free, easy to digest, high in vitamins and minerals, quick and easy to prepare, and a great favorite with children thanks to its soft and snow-white meat. It also absorbs the flavor of herbs, spices, wines and broths very well, which makes it ideal for stews, ragouts or risottos. Rabbit meat therefore provides a special gastronomic experience both as an everyday and festive dish.

Cultural and culinary heritage

Rabbit meat, which is now forgotten in our country, is a fundamental ingredient of European gastronomic culture, which has been part of Hungarian cookbooks and culinary art since ancient times, and is therefore our invaluable culinary heritage. Rabbit meat and rabbit dishes therefore have their place on Hungarian menus, but it needs to be introduced and loved by consumers again. To this end, the Hungarian Rabbit Product Council has joined forces with its Spanish sister organization INTERCÚN to save the sector. To this end, a 3-year campaign series co-financed by the European Union has been launched, one of the first stages of which is this week.

Hungary is the 4th largest European rabbit meat producer after Spain and the 2nd largest exporter in the world with more than 50 active farms. The quality of domestic rabbit meat is excellent and reliable, and the production standard is first-class, which includes animal welfare, food safety, as well as environmental, economic and social sustainability.
