The construction of Pick Szeged Zrt.’s new plant has begun
The construction of Pick Szeged Zrt.’s new salami plant in Szeged on Szabadkai út has begun, the general manager of the food industry company belonging to the Bonafarm group announced on Friday.
István Takács, founder, Pick Márk, said at the inauguration of the commemorative plaque erected on the occasion of the 135th anniversary of the opening of the meat plant, that the increased demand for Pick Szeged Zrt.’s products necessitated the expansion of capacity.
The CEO emphasized that Pick winter salami is clearly the main product of the company. While Márk Pick initially only sold its products in and around Szeged, today the company matures more than one million sticks of winter salami at a time in 32 aging chambers.
Pick’s winter salami recipe has remained unchanged for a century and a half, apart from technological developments: the use of high-quality, noblest parts of pork, unique seasoning kept as a secret by the salami master, smoking and aging for 90 days, during which the mold that survives in a special microclimate forms a grey-white mold layer on the surface of the sticks, which it provides not only a special appearance, but also a unique taste – informed the expert.
