Belgian startup uses AI to reduce food waste
The Belgian company Polysense is pioneering a new way in food processing, combining technology and operational intelligence. Their goal is to help producers work more efficiently, sustainably and economically, as production volumes increase and quality expectations become stricter. The company’s founder and CEO, Yarne De Munck, emphasizes that sustainability and production efficiency cannot be separated, especially in the modern food industry.

Originally started as a student project, Polysense has grown from a team of three to nearly thirty in less than three years. The company initially tried its hand at several industries – from pharmaceuticals to dredging – before realizing that the biggest impact could be achieved in the food industry. They now operate in seven countries, including Belgium, the Netherlands, the UK, Spain and Dubai, and serve customers such as Aviko, Agristo, Darta and Tummers.
The role of automation in fresh produce processing
One of the biggest challenges in fresh produce processing is the variability of raw materials. “No two potatoes are the same, but global chains like McDonald’s expect a consistent quality product,” explains De Munck. Static processing methods generate significant waste, so Polysense has developed two key systems: Qualify provides automated quality control, while AutoControl adjusts production parameters in real time. For example, when peeling potatoes, brushes and peeling settings dynamically adapt to the product, so that the required amount of skin is always removed. This method reduces waste, improves product quality and shortens production times. The technology can also be used on carrots, peppers, tomatoes, and in industrial bakeries, thus widely supporting efficient and sustainable production.

The example of Polysense shows that technological innovation and sustainability can work in harmony. Continuous quality control and automation not only increase the efficiency of producers, but also significantly reduce food waste – especially in large-scale production. International demand for the company’s solutions is constantly growing, and the company aims to become a global leader in the application of operational intelligence in the processing of fresh produce in the next five years. Thus, Polysense’s activities not only increase the profits of companies, but also point the way towards sustainable and efficient agricultural processing, which is one of the most important challenges of the modern food industry.
