János Cseh in Gundel
It came as a bit of a surprise, when János Cseh, the ex-chef of Sofitel and Novotel Congress and one of the best chefs in the country, announced in March that he is to become the chef of Gundel restaurant. He had only been appointed the chef of Hotel Accor a few months previously, but as he has explained to us, the job turned out to be far less challenging than he had been promised. János Cseh had already worked for Gundel, under the supervision of his predecessor, Kálmán Kalla. As he is knows as a reformer, it will certainly be a challenge for him to get his style accepted in Gundel, which had been directed in a rather conservative style by Kálmán Kalla. “I am committed to modern cuisine and I would like to get it accepted here. I am also familiar with the Gundel style and I intend to keep many elements of it. However, a kitchen cannot be competitive without the use of modern technology.”
