In the announcement sent to MTI, it was highlighted: the goal of the consortium is to develop a method of producing a special protein mixture, the nutritional value of which exceeds the nutritional value of whey protein, which is considered ideal. The development of the protein mixture would be a partial solution to the increased need for protein causing the global problem by the fact that the mixture contains a significant amount of high-quality milk protein, they wrote.
The research and development project is expected to last three years
As a first step, Sole-Mizo’s specialists assessed the technological possibilities of the development and carried out sensory evaluations; the university examined 43 types of raw materials suitable for supplementation – a procedure aimed at increasing the protein nutritional value; Medifood Hungary Innovation has created a calculator suitable for determining the biological value of individual proteins. In the announcement, it was also mentioned that the protein products produced by the dairy industry can be classified into several groups, one of which is the group of milk protein isolates/concentrates – MPI/MPC -; the consortium members are working on the production of a special protein mixture based on this.
