Safe holiday preparations: food safety tips for your Christmas menu
At Christmas, family recipe collections come to the fore again, serving as the basis for compiling the festive menu.
During Christmas catering, it is of utmost importance that, in addition to preserving flavors and traditions, we also fully enforce food safety aspects. To support this, the National Food Chain Safety Office (Nébih) Education Program has compiled the most important food safety guidelines this year, which are especially recommended to be followed when preparing the traditional Christmas menu.
The most popular Christmas dish is fish soup, the preparation of which is different in every family, but the basic food safety rules are the same. The basis of the perfect fish soup is fresh ingredients, so it is important to buy the fish from a reliable place, paying attention to the fact that its meat is elastic, its eyes are clear, and its smell is fresh. Another classic dish of the holiday is a whole roasted turkey with liver stuffing, which requires special attention. The stuffing should be prepared fresh, and the liver and other ingredients should be pre-heated if possible. The most important rule is that the internal temperature of both the turkey and the stuffing should reach 75°C.
