Poultry wiener innovation from Merian
In Hungary’s poultry processing industry the B. M. Bernardinelli family were among the pioneers, establishing a company in Orosháza in 1996. The company has always been one of the biggest innovators and its branded products are well-known and popular in both Hungary and abroad. Merian’s ORSI and REX CIBORUM product lines were the first Hungarian branded products in the poultry product market. Merian Foods Kft.’s products can be competitive in the market thanks to their biggest advantage: they are made using state-of-the-art technology. In 2013 Merian Foods Kft.’s was granted funding for realising a 2-year Innovative R&D project, which had to be completed by 31 December 2015. The goal was to adopt methods and technologies in poultry processing which not only result in high-quality products, but also reduce the burden on the environment. In the 3-phase project one of the most important steps was the introduction of the alginate technology: instead of the cellophane and edible casings used formerly, the company started covering wiener products with algae extract. Thanks to this, the energy use of wiener production reduces significantly. What is more, no casing has to be stored during the production process, the new coating on wieners is cheaper than the use of casing and as the production process is closed, the level of hygiene safety increases. Merian Foods Kft. will promote the product at several events and trade exhibitions in the near future. (x)
