Many are aware of the special flavours created when a beverage is aged in a barrel that has already been used to age another type of beverage. Innovative bartenders started aging mixed drinks in such barrels. The specialists most of the time using gin as the basis. New York City bartender Jeff Morgenthaler ages Manhattan in Madeira casks and Negroni in Bourbon casks for 8 weeks. These drinks cost 20-60 percent more.
