The recipe for success
With her mayonnaise, Anna Kovács won Trade magazin’s special award at the competition organised by MÉTE. – Anna, could you say a few words about yourself? – I am 25 years old, I am in my last year at the food technology engineer faculty of Corvinus University.
– Congratulations for winning the ‘base material of plant origin and processed technologies’ section and for Trade magazin’s special award!
Who gave you the idea to enter the contest? – One of my tutors made butter last year and we decided to add two more products, one of which would be mayonnaise without preservatives or any other additives.
– How did you start the project? – We started experimenting with the right recipe and it took six months to find the final version.
– What did you use instead of artificial materials? – Classic mayonnaise is made from egg and cooking oil. We replaced the latter with extra virgin olive oil and changed the classic spicing too. The product’s shelf life is about ten days at the moment.
– What is the next step? – We commenced the patenting procedure. We would like to increase the shelf life to sixty days – we need about six months for this. We would like to come out with a cream cheese too.
– Price/value ratio: is it competitive enough? – It is more expensive than the two market leading products. We would like to set the price low enough to make it affordable to everyone.
