The world according to the young chef elite
S. Pellegrino founded the international S.Pellegrino Young Chef Academy with the objectives of contributing to the development of junior chefs and popularising sustainability, inclusion and social responsibility. The academy’s 2021 report has been published recently and it reveals that 47 percent of respondents – young chefs from the 18-34 age group – think: the pandemic isn’t the biggest driving force behind the changes in the profession, as 52 percent said it is the growing environmental consciousness and the increasing demand for sustainable operations. More than three quarters of young chefs are afraid that they will lose their job because of the pandemic. //
