The place of processed foods in a balanced diet
In the last decade, many different classifications of foods have been created, of which the NOVA classification is the first to classify foods based on their level of processing and the purpose of processing.
The ingredients of multi-processed foods often include elements that are extracted nutrients from a raw material, such as casein, lactose or even gluten. There are many food processing techniques that have no household equivalent. Examples include hydrogenation or hydrolyzation.
The implementation of a balanced diet begins with the choice of food, so it is not surprising that many methods of categorizing food are emerging these days. Some of them serve to make food labeling as comprehensible and transparent as possible, others help to determine the direction of food development, while some form the basis of food regulations.
