Vegan cheese has been around for a while. They are typically made with tried-and-true ingredients such as cashews, coconut oil and cultures to replicate the taste and texture of traditional dairy cheese, but up-and-coming players in the vegan cheese industry are breaking out of the box with their unique developments. Vegan brand The Simple Root recently launched its new range in the US and UK. Meanwhile, the Swedish brand DUG is using potatoes to reinvent dairy products. Uniquely, the company claims that its potato milk is the best alternative on the market, pointing out that the potato is a super-sustainable crop that is twice as efficient to grow as oats, requires 98% less water than almonds and has a carbon footprint of only one-third that of cow’s milk . DUG’s vegan milk contains potatoes, rapeseed oil and additives such as chicory fiber and pea protein. Its newly improved recipe offers a lower sugar content and is maltodextrin-free.
