Another restaurant received a Michelin star in Slovenia
Ana Ros, the chef of the Hisa Franko restaurant, was able to keep her three Michelin stars, the Milka restaurant led by chef David Zefran was able to keep her two stars, and the number of one-star restaurants in Slovenia increased from seven to eight, the local press reported on Tuesday.
Ana Ros, the chef of the Hisa Franko restaurant, was chosen as the best female chef in the world in 2017. The Michelin Guide did not examine Slovenian gastronomy before, but it was precisely because of Ros that it decided to publish a regional guide for Slovenia in 2020. Hisa Franko won its third Michelin star in 2023, which it managed to keep this year.
The Milka restaurant in Kranjska Gora won its first Michelin star in 2022, and the second a year later.
Pavus, located in Lasko Castle, received a Michelin star for the first time. Marko Pavcnik, the chef of the restaurant, pays a lot of attention to sustainability when purchasing local ingredients, and he follows a “nose to tail” philosophy, i.e. he uses every part of the animal.
