Dairy-, gluten- and added sugar-free dishes: aesthetically pleasing and quick
More and more research and articles are confronting us with the high number of food allergies and sensitivities both in the world and in Hungary. Moreover, when we talk about someone not being able to eat certain basic food ingredients, diabetes is also worth mentioning. Let’s face it, it’s not easy to eat really well without milk, wheat flour and sugar. Variety and the ability to quickly “throw together” eye-catching dishes were unimaginable for a long time. However, like many others, Dr. Csaba Németh and his team, together with the MATE Institute of Food Science and Technology, are working to ensure that everyone can experience gastronomic experiences without making any sacrifices. They also brought a few brand new recipes for this.
Tuna Sweet Potato Boats
Ingredients per person:
1 white sweet potato, 16 dkg canned tuna (in its own juice), 5 dkg ToTu extra spicy, 5 dkg paleo oil, Dijon mustard, cracked pepper, lemon juice, 1-2 spring onions (or chives), chili, lettuce, salt
Fry the sweet potatoes with their skins on. Mix the ToTu extra creamy with a little mustard. Add the oil in small portions. When it has the consistency of mayonnaise, season with salt, pepper, and lemon juice. Stir in the drained tuna, chopped spring onions, and chili. Cut the baked sweet potato lengthwise. Fill with the tuna cream. Sprinkle with chili and spring onion. Serve with salad.
3-minute vanilla pudding
Ingredients:
50 dkg whole egg rolls, 2 dl water, 7 dkg honey (or other sweetener that can be adjusted to your diet, according to taste), scraped seeds of 1 vanilla bean
Put all ingredients in a blender and process until creamy. It’s that simple!
Protein-rich chicken paprikash
Ingredients for the nokedli per person:
10 dkg boiled egg white sticks, 1 egg, 2 dkg fat (any kind), 4 dkg arrowroot flour, 1/2 heaped teaspoon salt
Put all the ingredients for the nokedli in a blender and process until smooth. Cook in salted, hot, but not boiling water for 2-3 minutes (if it rises to the surface of the water, you can take it out; if it cooks too long, it will fall apart, but this way it will have the perfect nokedli consistency. Drain and rinse with cold water.
For the paprika for 4 people:
4 chicken breast fillets, 1 large onion, 2-3 tablespoons of fat (optional), 20 dkg of ToTu extra creamy, 1-2 tablespoons of lemon juice, 1 bell pepper, 1 tomato, red pepper, ground pepper, salt
For the paprika, sauté the finely chopped red onion in the fat with a pinch of salt. Add the bell pepper and tomatoes cut into smaller pieces. Sprinkle with red pepper. Pour in a little water. Simmer until until the peppers and tomatoes are soft. Blend with a hand blender. Add the chicken breast. Season with salt and pepper. When the meat is soft, add the ToTu extra creamy sauce mixed with lemon juice. If necessary, season the sauce with more salt and pepper. Bring to a boil.
